Recipe: Pineapple Lemon-Ginger Ice Cream


Pineapple Lemon-Ginger Ice Cream (Soft Serve)

Prep Time: 5 minutes, plus freezing time

Serves: 8

Ingredients:

♦ 12 oz. organic frozen pineapple

♦ ½ cup fresh lemon juice

♦ ½ cup organic coconut cream (the THICK stuff!)

♦ ¼ cup organic blue agave from YLEO

♦ ½-inch piece fresh ginger, peeled and finely grated

Directions:

Combine the pineapple, lemon juice, coconut cream, agave, and grated ginger in a blender. Blend on high until smooth. Stir in Ginger Vitality oil and Lemon Vitality oil. Scoop into 4 small bowls and serve.
